With Los Pinos Estate, owned by Gutierrez family, Cafe 1959 have a very good partnership since 2018. Located in Planadas, Tolima, a remote area 13 hours away from the center of operations of Cafe 1959 and in the heart of the Andes mountains.

This lot is a direct trade with Cafe 1959. What distinguishes them is their passion towards achieving sustainable coffee processing methods. They achieve this through conducting several biological, chemical, and physical experiments that contribute to sustainability.

WHY DO WE LOVE SANTA CLARA?

  • Special first 12 hours fermentation process in the grain pro bags at a controlled temperature of 8 C.
  • After arriving to the facility, cherries were put for 12 hours more to ferment anaerobic in sealed tanks
  • Dried on raised beds for 40-50 days down to 10% and AW<0.6
