The GN-1847 lot showcases meticulous attention to detail. Cherries are hand-picked at peak ripeness, floated in mountain spring water, and undergo a precise fermentation process:
Open Tank Fermentation: 24 hours.
Anaerobic Dry Process: 96 hours. After fermentation, the cherries are manually sun-dried on African raised beds for 25 days, resulting in a cup with exceptional clarity and complexity.
