Cherries were collected and put into Grain-pro Bags to start the 13 hours nighttime trip from Huila to Quindio (Where the 1959 fermentation and drying facility is located). Traveling during the night helps control the temperature in the first stage of the fermentation inside the truck. Once the coffee arrives in Quindio and complete 24 hours, they are placed into open tanks with water for 348s while pumping continuously bubble with oxygen to have the pectin in the coffee cherry fruit break down and creates a unique group of micro organisms. Afterwards, the whole cherries were slow dried in sun raised beds, milled and then vacuum packaged.
