Orange Wush Wush
The family estate of Las Marias sits at an altitude of 2,000 masl within the forests of the Andes mountain range. On the farm, they have planted only rare and exotic varieties and are one of the very few farms in Colombia that have orange-striped Wush Wush
This wush wush was processed by Jose with 120 hours of anaerobic fermentation before it was transferred to African-style raised beds for slow drying. He also stalls the drying mid-way to increase the microbial load and encourage the natural yeast to ferment further.
